I think that a female Dracula feed on babies because she needs pure and innocent blood that can't affect their human bodies. (by Oanaas)

Actually, I must say it isn't by chance that young unmarried , or newly-wed women, who haven't given birth seek babies' blood, once transformed into she-vampires. Dracula has depriven them from motherhood, so they look for what they never had, only in a twisted way, in order to suck the blood (death connotations), instead of a baby sucking milk(i.e. life) from them.
Of course, their callousness shocks the audience even today, adding to the horror of the gothic novel.
